Elizabeth Yarnell is the author of Glorious One Pot Meals. I love this cookbook and think it's a wonderful addition to any Mom's kitchen.

Elizabeth is a Certified Nutritionist and her cooking method is actually patented. She promises a healthy, whole foods dinner on the table in 45 minutes. The individual ingredients retain their original characteristics for an appealing flavor, texture and visual appeal. No mushy, brown veggies from a slow cooker, and no scary microwaves either.

The One Pot Meals method perfects an “infusion” style of cooking that uses steam to create perfectly cooked veggies, grains and meats (and even fruits if you include them) to create a balanced, nutritious dinner. You will need an enamel coated cast iron Dutch Oven to use her method. These are available at stores like IKEA, the grocery store Publix (carries the La Creuset line) and other retailers.

The cookbook is divided into taste sections. Are you in the mood for something hot and spicy, traditionally hearty, or more light and flavorful? Just flipping through the book will make your mouth water. Even though there are dozens of delicious recipes in her book, you can use the method to create your own unique recipes from scratch. All you have to do is refer to the ratios of dry versus wet ingredients and the stacking method, and you can experiment away.

Glorious One Pot meals also includes grocery shopping tips and pantry stocking ideas to make dinner prep go more smoothly. This is highly recommended for any busy Mom who wants to serve her family nutritious meals with fresh ingredients, without spending all day in the kitchen!
